Ingredients open

1 tablespoon unsalted butter, at room temperature
2 tablespoons flour
2 tablespoons olive oil
4 large parsnips, peeled, halved lengthwise and cut into 1-inch lengths
4 large carrots, peeled, halved lengthwise and cut into 1-inch lengths
1 celery root, peeled, and cut into 1-inch pieces
2 turnips, peeled, and cut into 1-inch pieces
2 cups (8 or 9 ounces) frozen pearl onions
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
Salt and pepper, to taste
1 cup white wine (or stock if not using wine)
4 cups vegetable stock
